  • 100G COOKED QUINOA+
  • 50G ZUCCHINI, GRATED
  • 1 EGG, LIGHTLY BEATEN
  • 50G PLAIN FLOUR
  • SALT AND BLACK PEPPER
  • EXTRA VIRGIN OLIVE OIL
  • 60G HALOUMI, SLICED
  • BREAD ROLLS, HALVED
  • BABY SPINACH LEAVES
  • 1 VINE-RIPENED TOMATOE, SLICED
  • KETCHUP
  1. Place the cooked quinoa, zucchini, egg, flour, salt and pepper in a bowl and mix to combine.
  2. With floured hands, shape the mixture into patties and flatten to 1cm-thick. Heat half the oil in a large non-stick frying pan over medium heat and cook the patties for 3–4 minutes each side or until golden. Set aside.
  3. Add remaining oil and cook the haloumi for 1–2 minutes each side or until golden. Top the rolls with spinach, patties, tomato, ketchup and haloumi.
