Now that I live ”alone” I have to cook dinner for myself, which for the first week was rice with ketchup or pasta with ketchup. So neither healthy nor very enjoyable after 3 days. Second week I changed it up a notch, I bought carrots. Third week in I had carrots with houmous and one day even avocado and eggs on toast. What a dream.
That dream came to an end quite quickly because almost immediately after that eggs on toast action, I decided that I want to try going vegan. And that is when it all started.
My grocery shop got twice as expensive, my shopping list twice as long, but my dinner twice as tasty. So may I present to you the first ever food I got praised for. My modified version of a Lo Mein recipe I found.
what you need for 2 servings:
- 4 ounces noodles (I used wholeweat spagetti)
- 1 tbs of olive oil
- 1 cup mushrooms
- 1 red bell pepper
- 1/2 cup sugar snap peas
- 2 cups baby spinach
- 2 tbs soy sauce
- 1 tsp sugar
- I have some sesame seeds to sprinkle on top for when I eat it.
That is legit it and it takes 15 minutes to make!
So first you take a small bowl and whist together the soy sauce and sugar and set it aside.
In a large pot, bring water to a boil and cook the spagetti the way it says on the package. While all the boiling and al dente making is happening, you wanna cut all the vegetables. Don’t forget to stir the pasta every couple of minutes!
Then put a pan on the stove, put some oil in it and wait..
After you completed the waiting, put the mushrooms and pepper into the pan for about 3 minutes, before adding the peas and spinach for another 3.
The pasta should be ready by now, so drain it well and add it to the vegetables. Stir in the soy sauce AND THEN YOU’RE DONE. Easy peasy lemon sqeazy.
